Cranberry Orange Nut Bread
Easy and enjoyed by all.

Ingredient List
2 eggs
1 C sugar
1/4 C butter, melted
1 t vanilla
1 C whole milk
2 1/2 C flour
1 t baking soda
1 t baking powder
1/2 t salt
1 T orange zest
1 1/2 C fresh cranberries coarsely chopped
1/2 C pecans (or walnuts), chopped
Cooking Instructions
Preheat oven to 350 degrees. Spray a 9×5” loaf
pan or 4 5×3” mini loaf pans with non-stick spray.
Bake 55-60 minutes for large loaf, 40—50 minutes for mini loaves. Test for doneness with toothpick. Tops will be golden and cracked.
Preparation Time
In mixing bowl, beat eggs and sugar until well blended. Stir in melted butter, milk and vanilla. Combine flour with soda, baking powder and salt. Mix wet and dry ingredients until just moistened, then fold in cranberries, nuts and orange zest. Don’t overwork the dough.
Spread the dough in prepared pans, about 2/3 full.
Serving Suggestions
Cool for a few minutes before removing from pan. Mini loaves may be wrapped tightly in plastic wrap and frozen. They make excellent gifts for the holidays!
