Ettinger Family’s Latkes for a Crowd

Easy and enjoyed by all.

Ingredient List

3C frozen shredded potatoes
2 eggs, beaten
1/4 C chopped onions
3 pkgs Manischewitz potato latke mix (divided)
1 lg. bottle canola oil (or more)

Cooking Instructions

Prepare two additional boxes of latke mix per instructions on box. Add to potato mixture and mix together

In frying pan, heat oil to medium high (may use 2 pans). Place 2-3 T mix into hot oil and flatten slightly. Fry in oil 3-4 minutes per side, or until golden brown and crispy.

Remove and drain on wire rack over paper towels.

Preparation Time

Recipe feeds 15-20 people. For smaller amounts, follow step one, or prepare one package of latke mix.

Serving Suggestions

Serve with applesauce or sour cream.
